Vegetable Chilli Recipe

A bit of a different blog post for you guys today but I thought I would share with you one of my favourite meals to cook throughout December, that is vegetable chilli, the perfect substitute for chilli con-carne, with a winter spice that is to die for!


To make this you will need; (serves 4-6)

3 medium sweet potatoes
1.5 teaspoon of cayenne pepper
1.5 teaspoon of ground cumin
1.5 teaspoon of ground cinnamon
8 button mushrooms
1 teaspoon of mixed herbs
1 onion
1 red pepper and 1 yellow pepper
1 red chilli and 1 green chilli
6 fresh tomatoes
2 tins chopped tomatoes
1 tin of kidney beans
Olive oil


Method;

Peel and chop sweet potatoes into bitesized chunks, place on baking tray and cover in olive oil. In a small bowl mix half a teaspoon of each spice then sprinkle over sweet potato chunks until sprinkled over them all. Put into the oven at 180 degrees c for 35 – 40 mins turning half way, until golden brown.

Peel and roughly chop onion, both peppers, mushrooms and chillies. Put into pan with olive oil and lightly fry the vegetables, add the tinned tomatoes and fresh ones and put in the rest of the left over seasoning.

Peel and finely chop garlic and stir into the chilli. Rinse kidney beans and add to the chilli, leave it all to simmer for 15 mins then add the sweet potato chunks from the oven to the pan then cook for a further 20 mins (or longer if you want there to be a kick!)

Serve with Doritos and rice (and any sides you want!), and enjoy!
